Meatless Monday Recipe–Gwyneth Paltrow Nori Hand Rolls

As a vegetarian, the only item from the sea you should be eating is a sea vegetable. That shouldn’t be a problem, as there are dozens of varieties like nori, hijiki, wakame, arame and kombu that can be used in salads, wraps and many other dishes.
Gwyneth Paltrow has featured a recipe for Nori Wraps in a recent edition of her online newsletter, Goop.
Paltrow’s wraps are dipped in a creamy non-dairy, vegan mayonnaise–Vegenaise. This is a good cooling complement to offset the spicy Wasabi powder that livens up the asparagus, green beans and brown rice.
Being a mother herself, Paltrow recognizes the importance of introducing more wholesome food to children. She has modified the recipe to accommodate the digestive abilities of toddlers, as caregivers are instructed how to puree the vegetable fillings of the wrap, making a baby food dish that rivals those purchased from the shelves.
