Trisha Yearwood‘s Food Network series on southern cooking, Trisha’s Southern Kitchen, debuts Saturday, April 14 and country music loving vegetarian fans will be happy to learn much of the show will focus on plant-based cooking.

Yearwood’s mother was diagnosed with cancer and during the later stages of the disease she switched to a vegan diet, motivating Yearwood to do so as well.

“I really wanted to address that in the show,” Yearwood said in an interview. “We were amazed at how she took some of these very southern butter-and-cream-laden recipes and turned them into non-dairy things to eat. She really inspired me.”

When it comes to inspiring her own family to eat better, Yearwood motivates hubby Garth Brooks and their teenage daughters by getting them involved. The family hosts regular “veggie nights” where they all get in the kitchen, chop up plants and contribute to the finished product.

Yearwood answered the big question everyone wants to know: Can Garth cook?

“He is also a really good cook,” Yearwood said. “If I’m not cooking in the kitchen, he is, and he’s much more creative in the kitchen–creating dishes that I’d never even think of!”

    I find this incredibly hard to believe. partly because she eats meat and dairy on the show every episode. So far she has only made one dish with ANY vegetable in it– and that was mashed potatoes! Even her quiche had NO vegetables. Cheese is not a vegetable. Southern cooking actually has a rich history of vegetable dishes, but she seems to be incapable of coming up with a menu with ANY vegetables. Not really how traditional southern meals would be served. This is so bad. Clearly her show tries to present a whole meal menu, so it is appalling even to meat eaters that vegetables would be left out. I am tired of people making what is basically post-depression era middle america shelf stable food and calling it southern. This is not southern.

    I haven’t seen any episodes except for the one I watched today but was super excited to see that everything in this episode appeared to be vegan!!! The black bean lasagna (with tofu ricotta) looks awesome, and the Thai salad and peanut butter balls looked good too. The only reason I watched the episode to begin with is I saw tofu on the counter and wondered what she was going to do with it 🙂

    i agree with the last comment. i thought she was vegan, but then she is making chicken and beef and stuff with dairy and eggs in it.. so .. apparently she’s not..
