The strongest iron chefs know you can’t win a cooking competition without first filling yourself up with nutrient dense foods like this Mashed Tofu Salad.
Protein-rich tofu gets even better when tossed with fresh spinach leaves, seasoned with soy sauce and rice wine and sprinkled with toasted sesame seeds.
In Japanese cooking, mashed tofu salads are side dishes called “shira-ae” and usually contain some sort of vegetable mixed with the soy protein.
