Meatless Monday Recipe–White House Salad With Edamame (Video)

It’s a tough job, but there are plenty of perks to living and working in the White House.
Like having tasty salads prepared by White House chef Cris Comerford.
Comerford appear on the Today show to demonstrate two vegetarian recipes, one being a green salad with orange herb dressing.
Unless you’re a vegetarian rabbit, salads alone aren’t normally fulfilling. But they can be made so by adding numerous plant-based proteins like beans, nuts, and in the case of this salad, edamame.
One half cup of edamame added to a salad gives 8 grams of heart healthy soy protein, Vitamins C and A, plus all nine essential amino acids.

100 gram broccoli has 4.2 gram protein and is a good source of vitamin A and K (and others)
That broccoli in the photo could well be 200 gram , so that equals the amount of protein in the edamame beans.
