“US News And World Report” Features Vegetarian Universities And Colleges

U.S. News and World Report has an article highlighting the growing trend of going meatless on college campuses.
Several dozen high-profile colleges, including Syracuse University, have already implemented Meatless Mondays in the cafe courts and a few universities in the U.S. are completely vegetarian.
Maharishi University of Management in Fairfield, Iowa is one higher learning institute where meat eaters will have to leave campus or eat veg. The school menu is completely vegetarian and it also encourages meditation.
Bastyr University near Seattle, Washington was founded by a vegetarian and kept its food offerings the same as its founder for a long time before putting one meat item on the menu.
Other universities are taking green a step further by sourcing food from either campus farms like the University of California Davis and St. Mary’s College Maryland or local producers like Bates College, which received a donation of over 2 million dollars to do so.
Reported rates of vegetarianism among college students varies. A study by the 2009-2010 Bon Appetit Management Company found the number to be 12%. Others have estimated higher rates, around 18%.
