The vegetarian or vegan athlete isn’t the rarest species, but it sure is great to see one featured in a prominent recreational magazine read by thousands of running enthisiasts around the world.
Runner’s World, a publication of Rodale Press, has featured an interview with Jeffrey Eggleston, a seasoned marathoner who’s been chosen to run for the U.S. this summer at the World Championships in Daegu, South Korea.
Some insiders have projected an American win at the World Championships. Eggleston doesn’t doubt this is a very real possibility. From Runner’s World:
“We have a tremendous amount of talent and experience on this team. It’s humbling for me. I’ve only done three marathons now, and maybe I’ll squeeze a fourth in before the World Championships. But I’m still very much a student of the sport, and it’s a real honor to be on the team with them. Honestly, I believe even with my inexperience, I’m very capable of leading this team to a medal position in Daegu.”
On his personal homepage, there is a brief statement made about Eggleston’s vegan diet, which started in 2010:
“The beginning of 2010 also marked Jeffrey’s adoption of a vegan diet, as a renewed commitment to his personal health and with increased mindfulness for the environment. He appreciates how the vegan and professional endurance athlete lifestyles complement each other; both encourage a healthy, sustainable and well-balanced means of living.”
