Meatless Monday Recipe–“Engine 2 Diet” Sweet Potato Lasagna

The best way to prevent and extinguish high blood pressure, heart disease and diabetes is through food. Rip Esselstyn, author of The Engine 2 Diet, was lucky enough to have a cardiologist father who had seen the benefits of how a plant-based diet revered heart disease in his patients. But as a firefighter in Texas, he saw his fellow fighters trapped in a dangerous situation that no safety and rescue equipment could fix.
Esselstyn convinced everyone at the station to eat vegan, helping his team lose weight and possibly gain years to their lives.
Esselstyn’s Sweet Potato and Vegetable Lasagna is something the crew may have devoured during any given 24-hour shift at the station. Using mashed sweet potatoes for a creamy texture laid on top of noodles, the lasagna mixes tofu with vegetables like onions, broccoli, carrots and peppers for a “cheesy” filling. The final product features crumbled cashews sprinkled on top for a nutty, “Parmesan” finished look.
We can’t guarantee an effortless slide down a pole and arrival at your next mission in record time, but following a vegan plan like Rip’s is one of the best ways to prevent any health disaster.
