Meatless Monday Recipe–Padma Lakshmi Rajma (Veggie Chili)

After many years of rebellion, it looks like Padma Lakshmi may be returning to the vegetarian roots she grew up with. The Top Chef Masters judge has recently revealed she’s eating a lacto-vegetarian diet and intends to bring her baby up the same way.
If you have a love for Indian food, you don’t have to be a Top Chef to whip something up that meatless, and even dairy-free and egg-free, as much of the food in this cuisine is already based on many legumes like beans.
Rajma is a North Indiana dish that is a twist on regular Spanish and American chili dish. Rajma consists of red kidney beans in a “gravy,” and Indian spices served over rice.
Lakshimi uses Indian spices like Garam Marsala and Cumin and leaves rice out of the recipe for a truly unique version of chili that’s not only vegetarian, but vegan.

I ♥ that she is going back to be vegetarian. Not only for her, but her baby. But is she going to continue Top Chef now that she can’t eat 99% of the food?
