Meatless Monday Recipe–Twitter Seitan Via Biz Stone

Although it isn’t written in 140 characters, Biz Stone‘s recipe for seitan bourguignon has finally been posted to Martha Stewart‘s website.
Biz stopped by to demonstrate making seitan for Martha’s special vegan episode, which was a hit among meat eaters and vegetarians.
Hard core foodies may have been disappointed to learn Biz used already prepare seitan, instead of making it from scratch.
However, the use of already made seitan is only likely to attract even more people who have never cooked with the dish before and don’t want to feel overwhelmed by getting yet another component right in a dish for a lifestyle they’re just beginning. Prepackaged seitan that’s easy to find in both natural foods store and mainstream stores makes it that much easier for more people to eat vegetarian or vegan at their next meal.
This recipe makes a stew with seitan using fresh vegetables like onion, shallots and carrots added to vegetable broth. Then, shiitake mushrooms are baked until crispy and added on top.
