Meatless Monday Recipe–Pamela Lakshmi South Indian Spinach And Lentil Soup

Like many people born in India, Padma Lakshmi grew up in a vegetarian family.
Unfortunately, that changed as a teenager when she lived in New York and gradually started eating the Standard American Diet of bologna, pizza and burgers.
The tragedy of good vegetarian girl gone bad came to its lowest point when Lakshmi did a food porn commercial for Hardee’s Thickburger.
Lakshmi’s South Indian Spinach and Lentils takes her back to the days when she wasn’t sneaking a bacon cheeseburger behind her parent’s back before dinner.
Lentils are an incredibly rich source of protein, as much as 17 grams per cup. Yellow and orange lentils, commonly used in Indian dishes, are combined with spicy chillies and creamy coconut milk in this dish.
Black mustard seeds provide a colorful contrast to the dark, green spinach for a completely vegan soup that’s open to even more protein suggestions like tofu or beans.
Makes you wonder why Lakshmi ever strayed.
