Meatless Monday Recipe–Rachael Ray American Idol Worthy Chili

Rachael Ray held her Feedback party at SXSW and according to Billboard, it took her forever to decide on what food to serve during the one night event. It’s an event so stressful, she can’t bring herself to decide what dishes will make the final cut.
“I can’t do the final round of eliminations,” Ray said. “It’s like ‘American Idol’ and I’m J. Lo, unable to make the unchosen food cry.”
In the end, a vegetarian chili with portabella mushrooms was voted safe for the evening and the Sanjaya dish that makes everyone hurl but somehow makes it back to the table went home.
If Rachael knows anything about vegetarian cooking, it’s definitely how to make vegetarian chili.
Vegetarian Star found 4 different recipes for vegetarian chili and all of them can easily be made vegan by not voting on the cheese.
The Ridiculously Easy Vegetarian Chili: Beans, tomatoes, a zucchini and some of those “hot” spices. It will definitely make it through to next week.
Grilled Vegetable Chili: Multiple veggies. All grilled. Not the slightest bit “pitchy.”
Veg-Head Three Bean Chili: Besides the standard veggies and beans, this recipe also uses refried beans. As Randy Jackson would say, “It’s more than alright dawg!”
Vegetable Chili Mac: Yes, you add macaroni. Just like the box. But fresher and totally meatless.
