As stated in our review of Cooking Light Way To Cook Vegetarian, many recipes in the book have a “What It Adds,” and “What They Add” feature.
For this recipe, both the prepackaged potatoes and already seasoned tofu help speed up meal preparation.
Yield: 4 servings (serving size: 1 1/2 cups hash browns and 1 1/2 teaspoons parsley)
Ingredients
* 1 1/2 tablespoons olive oil
* 1 1/2 cups chopped onion
* 1 cup chopped carrot
* 1 garlic clove, minced
* 1 (20-ounce) package refrigerated diced potatoes with onion (such as Simply Potatoes)
* 1 cup coarsely chopped red bell pepper
* 1/2 teaspoon salt
* 1/4 teaspoon freshly ground black pepper
* 1 (8-ounce) package water-packed baked garlic and herb Italian-style tofu (such as White Wave), cut into 1/2-inch cubes
* 2 tablespoons chopped fresh parsley
Preparation
Heat oil in a large nonstick skillet over medium-high heat. Add onion, carrot, and garlic; sauté 4 minutes. Add potatoes, and sauté 7 minutes or until lightly browned. Stir in bell pepper, salt, black pepper, and tofu; sauté 4 minutes or until thoroughly heated. Remove from heat, and sprinkle with parsley.

Love the CL magazine – so would love 2 have the veg cookbook. Favorite vegan recipe is stirfried broccoli with seitan in brown sauce.

I would love to win because I have heard that vegetarian diets do not lead to kidney stones quite as often as other diets. I had three kidney stone surgeries this past summer and that is pain beyond belief.

I would adore winning the Cooking Light cookbook because CL is a fantastic publication, totally respected, and though it has amazing recipes, many are not veg! So it would be awesome to have an all veg version.
My favorite vegetarian food is anything Lebanese, especially stuffed grape leaves and baba ganoush! Thanks!!!

I currently subscribe to Cooking Light and delight at its delivery into my mailbox. My wife and I have been participating in World Vegetarian Awareness Month for 28 days and have both agree to go forward with this lifestyle change.
I don’t know if you can call it a vegetarian dish per se but my wife makes a killer morning vegetable smoothie. Above all else we consume for the day, this one single item starts each and every day and can only lead to healthy success.

One of my favorite veggie dishes to cook is a vegetarian pancake. It has broccoli, onions, and what ever other veggies I have on hand and think would taste good on it.

I would love to win this because I follow Weight Watchers and count my points and cooking light magazine always helps me come up with great, healthy, low fat/calorie recipes. I love cooking with sweet potatoes. I made a vegan sweet potato chili last week.

I’m a very new (< 1 week) vegetarian, but have been eating vegetarian dishes for years. Recently it clicked for me that this is the only way I should be eating. Currently I rely on online recipes, but would love the chance to win a book I could have in the kitchen.
My favourite meal to cook would have to be veggie pizza. Always a fun meal.

As a subscriber to cooking light, I always look forward to the Enlightened Cook section hoping to find something new and interesting. My all-time favorite meal to cook is soy chorizo and roasted corn tacos–and feed them to my unsuspecting meat eating friends.

I’d love to win the cookbook because I’ve been meaning to make pasta from scratch for ages so I just need a good (vegan) recipe. Also, because every cookbook opens up new (cooking) horizons :).
My favourite vegan dish would be a casserole with eggplant, pumpkin, chickpeas, tofu “cream” and lots of spices topped with seasoned bread crumbs.

I have been a vegetarian for about a year due to health issues. I subscribed to Cooking Light and liked their vegetarian section. I passed on the magazine to my daughter and she has used the other recipes. My favorite recipe is Cashew Raisin Chili.
