One half of the Skinny Bitches is back, with a book filled with not only recipes, diet and fitness advice, but thoughts on eating to create and maintain a healthier planet.

In Skinny Bitch: Ultimate Everyday Cookbook, author Kim Barnouin, uses a chapter of her latest work to give a firm lecture on sustainable eating minus the animal rights component.

“This is not where I criticize factory farming for its inhumane and utter disdain for animal welfare,” Barnouin writes. “Skinny Bitch already did that. Actually, I’ve got a whole other bone to pick with the industry: our food system and its immense contributions to greenhouse gas emission and global warming.”

Greenhouse gas emissions, water supply and pollution, deforestation, lack of biodiversity and fish depletion aren’t normally included with ideas for cooking tofu, but Barnouin has creatively incorporated educating the chef on these issues in a manner that’s informative and makes it easy to evaluate their own lives (how far has your food traveled?). For those having trouble getting started, she’s included tips for a greener diet, such as replacing animal fats with spices, foods to always buy organic and Making Meatless Monday a regular for those who still eat meat.

There’s still some of the Skinny Bitch sassiness in Ultimate Everyday Coookbook, such as the “Smart Bitches Read Labels” section.

Recipes include breakfast, soups, salads, sauces and dressings, side dishes, dinners, desserts and drinks.

Not bad at all for a woman who says a decade ago she would have laughed at writing a cookbook before meeting her French chef husband, who saved her from a consistent nightly lifestyle of eating soup from a can.
