Meatless Monday Recipe–Ann Romney Zucchini Casserole

Did you know that the Romneys had a “grown your own” philosophy long before it became a trend?
In her book, The Romney Family Table, Ann Romney shares recipes she has cooked for her family over the years, including one sourced from vegetables in her own garden.
Ann wrote:
“Mitt and I started a vegetable garden when we were first married and had the dilemma of what to do with all the zucchini from plants that were so prolific.”
The Romneys found several uses for the summer squash, which included sauteeing it, eating it raw and mixing it with potatoes and onions.
One of Ann’s favorite ways to prepare zucchini is in her Zucchini Casserole.
The beaten eggs in this recipe are supposed to be poured over the cheese. If you’re doing this vegan, an egg substitute probably isn’t the best option. Instead you can leave the eggs off completely or try tofu. The cheeses, of course, can always be bought vegan.
