Meatless Monday Recipe–Ina Garten Gazpacho

Ina Garten has a brand new cookbook out, Barefoot Contessa Foolproof: Recipes You Can Trust.
Garten hasn’t always been a favorite among health conscious vegetarians and she has been given the not so honor of having one of the worst cookbooks for healthy cooking by the Physicians Committee for Responsible Medicine.
But Garten does have a few good ideas for plant-based cooking, including some foolproof ways to do it Italian.
Whether or not her latest release of recipes will have anything relevant for veggies is not known.
But when she does vegetables, she does them well.
One of Garten’s older recipes is for gazpacho–a wonderful blend of tomatoes and cucumbers seasoned with onion and pepper.
It’s the perfect cold dish for a hot August day, refreshing and nutritious, with Vitamin A and C and plenty of fiber.
It may or may not be foolproof but it sure sounds delicious.
