Meatless Monday Recipe–Twinkies Comeback As Vegan

In case you haven’t been keeping up with the junk food news, the sugary snack food once thought to be in danger has been saved after all.
Hostess has re-introduced Twinkies this month, dubbing it the “sweetest comeback in the history of ever.”
They will be priced the same per box, but actually have fewer calories and fat grams.
But comeback kid or not, they’re no match for vegan twinkies, especially the ones from Fran Costigan’s book, More Great Good Dairy-Free Desserts Naturally.
That oh-so creamy center in the middle of soft, cakelike goodness is brought to you by tofu, which should be pureed thoroughly to ensure a delicious product.
“If properly made, there will be absolutely no taste of tofu,” the directions say.
Maple and agave syrup add the sweetest touch.
White chocolate is a bonus not even found in regular Twinkies.
According to an article at ABC News, Hostess is considering expanding its “healthy” line, adding gluten-free, extra fiber, low-sodium and low sugar items to its line.
Until the King of Twinkies makes it vegan, use Fran’s recipe instead.
