Chipotle Testing Tofu Burrito “Sofrita” In San Francisco

Vegetarians in the Bay area can now enjoy another item at the more environmentally conscious food chain Chipotle.
The company has unveiled it’s sofrita–a burrito made from shredded tofu–to be tested at select San Francisco restaurants.
This isn’t the first time Chipotle has expanded its menu to please vegetarians, as it has already tested a meat alternative protein and has always offered black beans as plant-based option (though the most strict veggies are told to shun the pinto beans as they are cooked in pork).
Chipotle makes it a priority to use ingredients from local and organic sources whenever possible.
Founder Steve Ells has also been reported to have been reducing his intake of meat.
