Cory Booker NJ Vegetarian Mayor Lives On Food Stamps

Cory Booker, mayor of New Jersey, has decided to embark on a challenge to learn how many Americans who are struggling to get by manage to feed themselves every month.

Like several other politicians have done, Booker is living on the amount a single individual in the state would normally receive with food stamps benefits.

He’s also doing it meatless.

His first purchase was for the amount of $27. 98 and included, “pink and black beans, corn and red delicious apples.”

Booker took a snapshot of the grocery receipt for his week’s worth of shopping, which the vegetarian mayor posted to his Twitter account.

For vegetarians short on cash, there are numerous ways to make the dollar stretch.

Buying in bulk, from the farmers market or even a local co-opt you belong to are just a few ways to save money.

And don’t forget that some of the cheapest foods to buy are also vegetarian. Web MD lists 15 nutritious foods for around $2 and the list includes high-protein plant-based foods such as edamame, lentils, whole grain pasta and wholesome breads.
