Meatless Monday Recipe–Presidential Pickled Okra

If you’re hosting a political party tomorrow to root for your favorite candidate, why not serve this pickled okra, created by a former First Lady, to entertain your guests.
Lady Bird Johnson was the wife of former president Lyndon B. Johnson, and like many first ladies, left a legacy of her own instead of standing in her husband’s shadow.
An environmentalist, she was active in several beautification and preservation projects in the D.C. area, including planing tulips and daffodils that are still seen at the nation’s capitol, campaigning for the Highway Beautification Act of 1965 and pushing for hiking and biking trails.
One of her biggest accomplishments was founding the National Wildflower Research Center, a non-profit environmental organization dedicated to preserving and re-establishing native plants.
While she wasn’t out pushing for a more beautiful America, LBJ spent a little time in the kitchen and the Lyndon B. Johnson Presidential Library has a collection of a few recipes that were favorites of her and the president’s, including this one for pickled okra.
Hailing from Texas, the Johnsons probably enjoyed this common southern food thought to be of African origin.
Available both frozen and canned, okra can also be purchased pickled, as LBJ did with this recipe.
