Meatless Monday Recipe–Laura Bush Vegetable Soup

Who’s says Texas is all about the cattle?
This week’s Meatless Monday recipe bears the name of a very famous former First Lady that hails from a land known for steak and not seitan.
That doesn’t mean the Bushes never enjoyed anything vegetarian.
Laura Bush‘s vegetable soup makes a nice plant-based alternative to meat stews. Pinto beans provide the protein and they are complemented with colorful and nutritious vegetables like summer squash, tomatoes, corn, onion and green beans.
And unlike some so-called “vegetarian” soups out there, this one contains absolutely no animal broths–just the goodness of vegetables simmering in their own juices.
It’s recommended you serve this with cornbread or tortillas. The cheese, as always, is completely optional.
