“How To Cook Like A Top Chef” Vegan Corn Tamales By Rick Bayless

Chef Rick Bayless and the Top Chef staff have compiled a cookbook featuring recipes from all six seasons of the show and the first season of Top Chef Masters. Plus, there’s tips for using utensils, getting the sauces just right and behind the scenes interviews.
Let’s not forget there’s Rick Bayless’ Vegan Corn Tamales.
The one thing a top chef should know is that there’s no chicken broth in a vegan dish. However, Bayless lists it as an alternative to vegetable broth if none is available. Yes, we know the book isn’t aimed at vegetarians, but if you’re going to call a recipe “vegan,” please don’t mention any chicken in the instructions unless it’s a vegan recipe to feed the birds.
Whether you’ll get anything else out of the Top Chef book has yet to be determined, but there are probably several other vegetarian recipes or recipes that can easily be made veggie with a few substitutions. However, for now, if you really want those corn tamales, featuring black beans and ancho chiles, complemented with glazed mushrooms and braised greens, grab and print the recipe here.
The Vegan Corn Tamales were made on the season 1 episode of Top Chef Masters where the cheftestants had the elimination challenge of creating a vegan dish without gluten and soy.
