Cornelia Guest's Simple Pleasures

Cornelia Guest has published a cookbook, Cornelia Guest’s Simple Pleasures: Healthy Seasonal Cooking and Easy Entertaining. As a vegan entrepreneur, it’s no surprise some of Guest’s simple food pleasures included in the cookbook divided by the seasons include Spring dishes like chilled asparagus soup, Summer dishes like Pesto Panini or any of her Guilt-Free Burgers, Fall pastas like spaghetti squash with Pine Nuts and Tarragon and Winter comfort dishes like Shepherd’s Pie and Spinach Tofu Lasagna.

Guest has several other pleasures besides those mentioned in her cookbook and she shared these with Luxury Travel Magazine.

Easy Sexy Raw Carol Alt

Carol Alt has published a cookbook, Easy, Sexy Raw, filled with 130 recipes containing foods she claims cured her of many ailments, including stomach issues and fatigue.

Those familiar with raw diets know they’re not always vegetarian, as is the case with Alt’s book, as some of the “raw food essentials” listed in the book include cured fish and meat. However, there are many vegetarian and vegan meals to choose from in Easy, Sexy Raw, like Salad Pizza with Tomato Sauce and Quinoa and Pesto Stuffed Tomatoes, a beautiful picture of which can be seen below.

Rory Freedman spent the day learning what it’s like to be paralyzed for Next Step’s “Wheelchair for a Day” challenge.

Freedman spends the day traveling with vegetarian artist Gretchen Ryan and one of the first stops they make is a trip to the yoga studio.

“Yoga is part of my everyday life and I was curious for myself to see, “If I were in a wheelchair, would I still have this part of my life that’s so important to me?” Freedman asked.

Rich Roll Finding Ultra

Rich Roll used his “midlife crisis” of obesity and fatigue as motivation to turn into a triathlete and ultra-marathoner who is healthier than most half his age. The vegan athlete, who was named one of 2009 Men’s Fitness “25 Fittest Men in the World,” has published a new book, Finding Ultra, that traces his steps to better health through a plant-based diet after the age of 40.

Roll spoke with CNN where he gave advice on what others can take from the book as they too approach half a century.

“The whole idea is baby steps. Try one dish a week. If it’s a big hit, throw it in the rotation, and then do another dish on Monday so then Monday is meatless, but Thursday is red beans and rice. What I love hearing is “My husband is a card-carrying carnivore, but I made him this dish from your book and he loved it so much he took leftovers to work.” When I hear that a dish is going to become someone’s staple, that’s just the coolest thing.”

"Skinny Bitch: Ultimate Everyday Cookbook"

Kim Barnouin, co-author of the highly popular and best-selling Skinny Bitch vegan diet book series, has signed a deal with Karen Kosztolnyik at Simon & Schuster’s Gallery imprint to write a novel with a similar title and vegan theme.

Skinny Bitch in Love is about a vegan chef who loses her job and her significant other simultaneously. Things get interesting and possibly steamier than a wok of tofu and veggies when she launches her own cooking school and falls in love with a meat-eating man.

Besides the Skinny Bitch series she co-wrote with Rory Freedman, Barnouin has published another book solo, Skinny Bitch: Ultimate Everyday Cookbook.

Victoria Moran Wants To Bring Out The “Main Street Vegan” In You

Main Street Vegan Victoria Moran

Victoria Moran‘s latest book, Main Street Vegan is, from what the title hints at, all about making veganism a more mainstream movement.

Growing up in the midwest, Moran says “people confused yoga and yogurt, and both were just odd.”

Today, she hopes not only to help them distinguish between the exercise and dairy product, but teach the basic principles of incorporating the rights foods into a well-balanced animal-free diet for better health.

Besides defining “yoga” and “yogurt,” Moran has also taken the time to define what a Main Street Vegan is.

Brendan Brazier has received the International Book Award for his nutrition and vegan cookbook, Thrive Foods: 200 Plant-Based Recipes for Peak Health.

Brazier’s won in the IBA’s category of “Health: General” and was chosen by a panel of individual with various writing and editorial experience from books produced by a variety of publishers.
