The best way to prevent and extinguish high blood pressure, heart disease and diabetes is through food. Rip Esselstyn, author of The Engine 2 Diet, was lucky enough to have a cardiologist father who had seen the benefits of how a plant-based diet revered heart disease in his patients. But as a firefighter in Texas, he saw his fellow fighters trapped in a dangerous situation that no safety and rescue equipment could fix.

Mark Bittman “How To Cook Everything Vegetarian” App On iTunes

Bittman is not only an established cookbook author, he’s also is a regular columinst for the New York Times who uses his platform to discuss issues on sustainable food, environment, health and animal welfare.

Barbara Gowdy is no stranger to speaking out for animals. A vegetarian for 30 years and a vegan for 10, Gowdy wrote the award-winning The White Bone novel based on the perspective of an African elephant.

Now, Gowdy is encouraging her readers to follow her lead and take a vegan challenge during Earth Week 2011, which takes place from April 17-23.

“As someone who makes here living as a writer and living in her imagination, I’d like to challenge everybody who lives in his or her imagination to take the Vegan Challenge and become a vegan for just a week,” Gowdy said.
