Iron Chef competitor, founder of Chefs for Humanity and a celebrity chef who’s publicly acknowledged the value of incorporating more vegetarian meals in a healthier diet, Cat Cora, is one of several celebrities praising Congress and Obama for putting the Healthy, Hunger-Free Kids Act into law.

“From the First Lady’s Chefs Move to Schools initiative to the President’s Childhood Nutrition bill, the Obama Administration has instigated a much-needed attitude change towards proper nutrition. As a chef and as a mother of four, I understand the importance of providing my own children with wholesome meals and firmly believe that all of our nation’s children should be afforded the same opportunity to grow up healthy which is why this legislation is so important.”

Natalie Portman graces the January 2010 issue of Vogue even better than the skillful ballerina she plays in Black Swan.

The actress reveals she is currently eating vegetarian at home and vegan when she goes out. Seems like it would be easier to find vegetarian options out, but perhaps Nat’s standards for cheese and eggs (non-rennet, cage-free) make it difficult to feel okay about eating simply vegetarian at restaurants where she doesn’t know the source of the food. If there’s a restaurant that serves hummus, however, it’s sure to get her business, as she’s a chickpea lover in public or behind closed doors.

“I consume my own weight in hummus every day,” Portman jokingly told Vogue.

Yes, in what originally looked like a wild rumor made up by a tabloid, E! confirmed that an elephant was part of the wedding for Richie and Madden on Saturday. A source told E!, “Nicole has always been obsessed with elephants. Lionel wanted to surprise her.”

With the cold season just hitting some of us, it’s still not too late to grab a few winter-wear items. Vegan designer and founder of Vaute Coture Leanne Mai-ly Hilgart has an interview in the Huffington Post where she gives alternatives to staying warm without using wool.

“It depends on the utility & look you’re aiming for, but if you’re going for the look but don’t need the warmth, cotton moleskin is a great option,” Hilgart said. “If you need warmth (as I always did in Chicago), high tech fabrics are needed– Polartec is an excellent one that includes fabrics that are all recyclable, and often recycled.”
