Who’s says the only good tasting green dip is guacamole?
Kristen Bell enjoys a dip made from edamame, an immature form of the soybean still in the pod.
She told Shape, “My friend, Chef Renée Loux, created a low-calorie substitute for guacamole that’s so satisfying,” she says. “It’s just edamame, olive oil, rice vinegar, and salt.”
This dip packs an impressive 10 grams of protein per 1/2 cup serving. The recipe calls for frozen edamame, which is packaged by well known organic companies like Cascadian Farm or Woodstock Farms brands.

Alice Walkers speaks out on value of black farmers and family farms
Author Alice Walker was honored at the Federation of Southern Cooperatives Land Assistance Fund, an advocacy group for black farmers. The Color of Purple author grew up on a farm with both her parents being harvesters, but told AI.com farming has over a 200 year history in her family.
A vegetarian, Walker said she considers her time with the Cooperative a merge between her passion for both animal rights and land preservation and hopes younger people will become educated about farming and choose to get involve.
Vegetarian Star has already briefly touched on initiatives to recognize and support eco-friendly black farmers, such as San Francisco’s Farmer Brown restaurant, which sources organic, sustainably grown and raised ingredients from local black farmers.
In addition, there is another organization that provides support to black farmers growing sustainable crops.

Created by Radhika Oswal, wife of billionaire Pankaj Oswal, Otarian keeps green by doing more than serving the Indian Chutney Burger and Vegetable Lasagna. Otarian doesn’t transport ingredients by air and will exclude them from a dish if no reliable from of ground transportation is available.

When most of us hear the word “additive,” not good images come to mind. Associated with artificial dyes and preservatives implicated in health problems and even animal derivatives not suitable for vegetarians, additives are usually not on the plan for wholesome eating and living.
But in a recent article in Time, Dr. Oz reminds us that additives have revolutionized nutrition, allowing people to get essentials vitamins and other nutrients that are sometimes hard to obtain through food.
“Consider three food additives that changed the natural history of certain ailments that have plagued humankind: folic-acid supplements help prevent neural-tube defects and certain childhood cancers, increased omega-3 fatty acids boost brain development and may increase intelligence, and vitamin D and calcium in dairy products reduce the incidence of rickets. We shouldn’t be indiscriminate, but a few well-selected additives can do a lot of good.”
For the vegetarian or vegan, non-animal sources of B vitamins is probably one of the best advancements in food science.

Tomorrow on Saturday, August 21st, 2010 at 6:00 PM, Sean Lennon will perform at a benefit concert for Woodstock Farm Animal Sanctuary in Willow, New York.
The Ghost of Saber Tooth Tiger is a musical project featuring Lennon and his girlfriend Charlotte Kemp Muhl. Their first album, Acoustic Sessions, is due out October 26 on Chimera Music.
Proceeds from the concert go directly toward Woodstock Farm Animal Sanctuary to care for the 200 farm animals that have been rescued from abused, neglectful or abandoned situations.
