Kim Barnouin On “The Early Show” Does Vegan Challenge (Video)

Kim Barnouin, co-author of the Skinny Bitch series who recently wrote her own cookbook, Skinny Bitch: Ultimate Everyday Cookbook, was a guest on CBS’ “The Early Show” as part of the show’s “Saturday Morning Chef on a Shoestring Challenge.”

Barnouin was there to show her favorite substitutes for animal products, which included almond butter and vegetables oils as well as explain the health benefits of a vegan diet and the controversy surrounding some suggested consequences of meat, such as early puberty in girls.

Her challenge was the make a 3-course meal with a budget of $40. She took the challenge by making an entire vegan meal of kale and white bean soup, polenta-crusted eggplant Parmesan, and chocolate cupcakes with peanut-butter frosting.

Rip Esselstyn has partnered with Whole Foods Market to guide customers in making the best choices for dinner, which consists of items that have roots in the ground, not an animal.

The author of the best selling book, “The Engine 2 Diet: The Texas Firefighter’s 28-Day Save-Your-Life Plan That Lowers Cholesterol and Burns Away the Pounds,” who turned his fire station veg explained to the Huffington Post that most people are “plant weak,” when they should be what he calls “Plant Strong.”

“I tell people, right now we have a country that is plant-weak. If you were to look at caloric pie of how Americans eat, close to 60 percent of America’s calories are coming from refined and processed foods. You know, the white stuff: the fried chips, the soda pop, fruit juices, doughnuts and cakes.”

When it comes to fashion, Bob Barker knows what’s in style and it’s not fur.

During an interview with Stylist, the vegetarian and animal rights activist explained how his wife got him on the right track to what’s trendy.

“My wife stopped wearing fur 35 years ago, and she wasn’t trying to influence me, but by example she did. I had several leather jackets and coats with sheepskin that I gave away. I stopped wearing leather belts and then stopped wearing leather completely. And this was all before I became a vegetarian about 32 or 33 years ago.”
