How food gets from the farm to your plate is becoming an increasingly popular topic, given the fact most conscious eaters want to know what they eat was grown under environmentally friendly conditions for the planet and farm workers and had minimum impact, if any, on animals.

The farm is also where many food education programs take children as part of an initiative to get them to eat better once they’ve become acquainted with how produce is grown and harvested.

Skinny Bitch author Rory Freedman and Jenny and Heather Goldberg of Spork Foods, a company that offers organic, vegan cooking classes in the LA area, visited a farm to learn the ins and outs of produce growing.

In between chit chatting with the “meat-eating farmer,” Freedman discusses vegan issues, such as cruelty to male chicks in the egg industry and what motivated her to give up animal products as well as environmental changes that have affected the nutrition and safety of our food.

Jessica Seinfeld became an even more famous wife of Jerry Seinfeld after publishing a cookbook, Deceptively Delicious, that offered tips for incorporating vegetables into kids’ meals. While the title made it sound as if Seinfeld wanted parents to trick kids into eating something unknown, she clarified with Parent Dish that was never the intention. It was more about enhanced vegetable marketing.

“There is never a moment when my kids don’t know how important vegetables are. I add purees like I would add milk or sugar. I don’t think of them as anything scandalous or deceptive. I think what’s really deceptive is how food companies market their food as good for people when it’s not. That’s the deception going on in the food world, not making your family’s food better for them. That’s not something I feel bad about.”

This fancying up of vegetables and other healthy foods and placing them in different locations is similar to what one high school in New York did to increase sales of wholesome foods and decrease consumption of sugared milk, desserts and other less desirable items.

"Skinny Bitch: Ultimate Everyday Cookbook"

"Skinny Bitch: Ultimate Everyday Cookbook"

Kim Barnouin doesn’t think there can be too many cookbook authors in the kitchen.

During an interview with UK’s So Feminine, the co-author of Skinny Bitch and author of her recently released cookbook, Skinny Bitch: Ultimate Everyday Cookbook, said recipe developers and food writers should definitely pursue their passion of writing deliciously.

“When you find the thing that you are passionate about, go after it 100%. There will never be too many cookbook authors. I love cookbooks so much and I am always on the lookout for new ones. Finding your specific niche can help narrow down your book ideas and help you focus on creating your specific style.”

Fortunately for vegetarians, vegans and those looking to reduce animal products in their diets, cookbook trends have shown the market is welcoming this guidance with open arms.

In an interview on The Leonard Lopate Show (the audio of which can be heard below), food author and flexitarian Mark Bittman shares a concern about getting sick from prepared, bagged produce that most of the public would naturally have after hearing of the outbreaks of illnesses over the years. Although he recommends a salad a day, he’s not so sure that salad should come from a bag.

“My only concern with the bagged stuff is whether or not it’s going to poison you or not. The convenience of cut up vegetables…what could be more convenient than that, as long as you’re not going to get salmonella from that. And I can’t answer that. I’d like to see our food safety system in a place where if people want to buy more conveniently prepared vegetables, they could do so without worrying about it.”

The convenience of bagged fruits and veggies have not come without consequence. There’s the occasional found frog leg in the frozen vegetables. The inedible glass pieces found in frozen peas. However, it’s usually contamination with e. coli or salmonella that leads to widespread sickness and fear of eating things good for you. Just when you thought it was okay to eat bagged spinach again, Consumer Reports recently conducted tests of 16 brands commonly found in stores and found, in the sanitation and contamination levels, there’s room for improvement.

Mark Bittman

“We need to be addressing the ratio of animal products, processed foods and outright junk we eat compared with plants. It’s pretty simple: Each of us should examine our diet and adjust it accordingly. Ideally, we’d get 90 percent of our calories from plants, and the rest from everything else. Many of us have that ratio completely reversed. It’s just a matter of moving in the right direction.”

Mark Bittman, author and promoter of his “vegan until 6” philosophy, where he doesn’t consume any animal products until after 6 PM. Of course, getting 100% of your calories from plants wouldn’t be bad either.

"Meat is for Pussies" John Joseph

John Joseph, author of the famous or notorious, depending on who you speak with, book about vegan diets, “Meat Is For Pussies,” has an exclusive interview at Ecorazzi.

For those that are still offended by the title, Joseph doesn’t care. And watch out. His fan base consists of both angels and inmates who agree the message is right on target.

“Get a sense of humor! Lighten up! The book is reaching everyone from Hells Angels to convicts in maximum security prisons to New York City cops — people they’d never reach. I really don’t give a shit about the people who are offended; they attacked Rory Freedman, too. But her Skinny Bitch books made millions of vegans and saved countless animals. I’ve been doing this for 30 years; the Cro-Mags have inspired tens of thousands of people to give up meat. I will never change who I am. As they say in India, “The dogs may bark, but the caravan must go on.””

More non-pussy talk about protein needs, organic vs. GMO foods and more at Ecorazzi.
