Mayim Bialik Double Chocolate Brownies Recipe

Mayim Bialik had said she needed a vegan, kosher, organic chef in the neighborhood, but from the looks of this recipe, sounds like Chef Mayim’s got it all under control.
These Double Chocolate Brownies can be made vegan or not, depending on your preference and have the unique addition of adding sweet potatoes to the batch.

1 large sweet potato
1 cup soymilk or rice milk (or regular if you’re not making it vegan)
1/4 cup oil
1 1/2 cups brown sugar
1 1/2 cups cocoa powder
2/3 cup pastry flour (whole wheat or regular)
1/4 teaspoon baking soda
3/4 cup chocolate chips (vegan or not)
Cook sweet potato either by boiling it in 1 cup water or microwaving it until tender. Allow it to cool. Meanwhile, mix soymilk with oil. In a separate bowl, mix dry ingredients (omitting chips) and then combine with the oil/milk. Skin the sweet potato and mash well. Add to bowl and mix. Add the chips and mix well.
Lightly oil a 9×13-inch pan. Spread batter evenly in pan and bake at 350 degrees F for 35 minutes or until a toothpick inserted comes out clean. Cool before serving. Serve with soy ice cream.

These sound good.
I think my wife used mashed sweet potatoes in a recipe before to substitute for egg, which is what I think she’s using it in this recipe for.
