Los Angeles Schools Adopt Meatless Mondays

Children attending schools in Los Angeles Unified School District can now eat vegetarian at least one day a week.
Last month, the second largest school district in the country took meat off the menu for Monday, joining dozens of other educational institutes, corporations and health care companies that have made it easier for employees and patrons to eat healthier.
A look at the menu for one school in the country shows what a typical Meatless Monday might look like.
Southwestern rice and bean bowl may be the main entree, along with sides of vegetables like baby carrots and fruit cups.
Notably missing, however, is the option for a non-dairy beverage, such as soy, rice or almond milk. Lower fat and lactose-free milks are offered.
Meatless Monday was originally created by the U.S. government to save money during World War I. It was relaunched in 2003 by Johns Hopkins Bloomberg School of Public Health to promote better human health and environmental awareness. Studies show about 50% of Americans are aware of the practice and 1 in 5 participate in it.
