The King of promoting a vegetarian lifestyle for Britain, the U.S. and the rest of the world, Paul McCartney, has compiled a list of his favorite recipes to help promote his campaign by enticing every meat eater’s taste buds, the Meat Free Monday Cookbook.

From the publisher:

“Often, though, our vegetarian repertoire is limited, with the result that our enthusiasm to continue with a meat-free day wanes when we are confronted with yet again eating the same dish. With menus for each of the 52 weeks of the year – two main recipes, plus four other ideas for each meal of the day – The Meat Free Monday Cookbook addresses this problem and is aimed at everyone who cares about the environment, is happy to eat vegetarian one day a week, but needs inspiration and guidance to do so.”

Paul, along with daughters Stella and Mary, launched Meat Free Monday in the UK, a campaign similar to the U.S.’s Meatless Monday, but with more focus on reducing meat intake for environmental reasons. McCartney has often cited the UN study that found raising livestock for food creates more greenhouse gas emissions than all forms of transportation combined.

Your meat free day doesn’t have to happen on Monday. Try McCartney’s Super Vegetable Salad, which features savory cornmeal dusted tofu strips laid over a bed of vegetables like cherry tomatoes, broccoli and green beans.

Today Stella McCartney unveiled her Spring-Summer 2011 collection from Stella McCartney Kids, a line of clothing for children, both boys and girls, newborn to 12 years old.

The vegetarian designer has kept her environmentally friendly ethics, using 100% organic cotton pieces featuring nature and animal illustrations and natural cork soled shoes

Stella will continue to donate a percentage of sales from five items in her “Lucky In Daisies” collection to the McCartney family Meat Free Monday campaign that encourages everyone to eat vegetarian one day of the week to reduce the impact of meat’s production and consumption on the planet. The designs feature prints created by her mother, the late Linda McCartney.

On her latest collection for children, Stella said: “Building from the basics of the launch collection, I wanted to use prints that would appeal to kids, such as animals, rainbows, and nature. The whole idea was to make clothes that kids will enjoy; and that are not restrictive. To allow girls to be girly and pretty, but still have fun and mix in some tomboy unisex pieces.”

The Spring-Summer collection will be available exclusively through StellaMcCartneyKids.com starting today, March 2, and then launch in stores worldwide a week later.

Boy George knows a little bit about corruption.

While serving a few months in prison for assault and false imprisonment of a male escort, George gave back to the world in more ways than one. In several interviews, he’s discussed how he got in the kitchen and made vegetarian meals for fellow inmates.

George may have very well served this Chickpea Corruption, taken from “The Heartland Celebrity Cookbook” by Sandra Owsley (Heartland Publishing 1991).

Requiring only one can of chickpeas, this recipe makes use of Indian spices Garam Masala and Cumin, along with onion, garlic and fresh tomatoes.

The chickpea itself is not corrupt, but one must wonder who it’s been hiding from, given the fact it has so many aliases.

Call it garbanzo bean, Indian pea, ceci bean or Bengal gram, this member of the legume family is high in protein and an invaluable addition to a vegan or vegetarian’s diet.

Stella McCartney has launched her first kids collection and is allowing child fashionistas with a techy side to enjoy the fashions via an iphone application, available from itunes for free. A percentage of sales from the Leo sweatshirt, shown above, will benefit the McCartney family Meat-Free Monday campaign, aimed to encourage people to eat vegetarian one day a week to reduce the impact of meat consumption on the environment.

The Collection: Keeping in Stella’s green ethics, the clothing line for boys and girls, aged newborn to 12 years, features modern styles crafted from organic cotton and absolutely no fur. According to ChildMode, every piece of clothing has been given a different child’s name, such as the Lara, an organic baseball shirt with stripes and floral prints.

“I wanted this first collection to include basic pieces that are comfortable and that address a child’s needs, without sacrificing the fun and carefree elements,” Stella said.

The iphone application: The accompanying iphone application allows users to browse the collection and share favorites with friends via email or Facebook. The app also makes purchasing a breeze for existing web customers and express shipping available in the U.S. And parents or children can have fun creating their own fashion ideas and drawing them on the built in Etcher Sketcher!

You know exactly who you are.

You never went vegetarian or vegan because you hated the taste of meat. The smell of Thanksgiving turkey still makes you salivate and walking past the steakhouse gives you fantasies that make you feel a bit naughty.

However, there’s no reason to feel guilty about a craving you never give into. And because you know there’s such an abundance of fake meat out there, you never will.

Ellen DeGeneres regularly features vegan recipes on her website and the recipe or her Club Sandwich is meant for former carnivores who’ve taken a turn for better ethics, yet aren’t turning away from taste.

The Club Sandwich features vegan whole wheat bread and mayonnaise, stuffed with vegan turkey or chicken (may we suggest Tofurky deli slices) and vegan bacon (Lightlife Smart Bacon or Tempeh bacon strips will do the trick), avocado, lettuce and tomatoes.

This sandwich makes a good warm-up tool for those trying to introduce meat eaters to vegetarianism or veganism, a hearty dinner or a great lunchbox filler for school or work.

Stella McCartney has designed another article of clothing to benefit the McCartney family Meat-Free Monday campaign, designed to encourage people to eat vegetarian once a week to lessen the impact raising livestock for food has on the environment.

This t-shirt features a print from Stella’s mother, the late Linda McCartney, who was also a champion of vegetarianism and more than likely responsible for the family adopting the ethics.

This Dish is Vegetarian reports the shirts will be launched this month in Stella’s store in Bruton Street, London. It is also available online for $215. A portion of the proceeds will support the Meat Free Monday.

This lead Paul McCartney to start the Meat Free Monday campaign, urging people to not eat meat one day a week. Do you think not eating meat one day a week is enough to help halt global warming?
E.B.: No, but it’s a step in the right direction. I always encourage people to expand their green diet. It’s a good choice for the environment and for your health.

M.W.: What’s your opinion on organic and sustainable foods?
E.B.: I think it’s an important part of our future, and something that people can get involved with right away

M.W.: What made you decide to become a vegetarian?
E.B.: It made me feel healthier, and allowed me to contribute to a lower personal carbon footprint as well.
