Meatless Monday Recipe–Alton Brown’s Edamame Dip (Video)

The last time we saw a green dip that wasn’t guacamole, Kristen Bell was introducing her friend’s version of edamame dip.
Soy dips must be good, because Food Network star Alton Brown is one celebrity chef who’s invented his own version of edamame dip, which gets quickly gobbled up by anyone who knows it’s available, as you can see from the video below.
The ingredients you’ll need for Alton’s Edamame Dip include:
- 12 ounces shelled edamame, cooked and cooled
- 1/4 cup diced onion
- 1 large clove garlic, sliced
- 1/2 cup tightly packed parsley (can also use Cilantro)
- 1 tablespoons Miso (Alton’s “secret” weapon)
- 1 teaspoons red chile paste
- 1/4 cup freshly squeezed lemon juice
- 1 teaspoons kosher salt
- 1/4 teaspoons freshly ground black pepper
- 5 tablespoons olive oil
