Ed Begley Jr. has an interview with Low Density Lifestyle that discusses his upcoming book, his motivations for going vegetarian and what he thinks about Meatless Monday initiatives.

Highlights from the two part discussion:

M.W.: The United Nations issued a report a few years back stating that meat consumption did more to affect climate change than all cars, trucks and planes combined. This lead Paul McCartney to start the Meat Free Monday campaign, urging people to not eat meat one day a week. Do you think not eating meat one day a week is enough to help halt global warming?
E.B.: No, but it’s a step in the right direction. I always encourage people to expand their green diet. It’s a good choice for the environment and for your health.

Vegetarian Carrie Underwood Grabs Multiple CMT Awards (Video)

Carrie Underwood has snagged yet another set of trophies from the CMT Music Awards and the vegetarian darling was the only winner to take home multiple awards.

In a competition where the fans pick the winners, Carrie received both video of the year for “Cowboy Casanova,” and CMT performance of the year for “Temporary Home.”

The singer’s most recent contributions to animals include donating $10,000 to a New York animal shelter.

Barack Obama Supports Lifting Whaling Ban

Barack Obama has incited the criticism of activists after his proposal to lift a 24 year ban on commercial whaling in Japan, Norway and Iceland. The administration argues that doing so will save more whales and countries will not attempt to use loopholes to hunt them and instead be required to follow strict reporting procedures of their whaling activity to governments.

The proposal would allow the countries to continue hunting whales in reduced numbers and also wants them to participate in a whale DNA registry.

Environmental groups aren’t buying it, and have already pressured Obama to withdraw his support before the Whaling Commission votes on June 20.

Ellen DeGeneres Makes Spring Rolls With Roberto Martin (Video)

Ellen DeGeneres brought her favorite right hand man in food, her personal chef Roberto Martin, on the show to demonstrate preparing vegetarian spring rolls.

Vegetarians just love dipping–ice cream, veggie dip, skinny dip…whoa, maybe too much information. But it’s always fun to make your own soy sauce, vinegar and spice dip for Asian treats like these and the recipe for such, along with the spring rolls can be found on Ellen’s page.

You discover something new every day and today’s lesson is black bean pasta, which is used in the creation.

“It’s so good for you. It’s really high in protein,” Martin comments on the pasta that’s a part of an entirely vegan meal.
